Radish Relish...A Summer Treat

Radish
We dug this old one up (no pun intended) to share with you all! 
This is a really simple recipe to put together and is great for topping on to hot dogs, burgers or anything else you want a little kick to.


Radish Relish

2 bunches of radishes, shredded

1 1/2 c distilled vinegar
1/2 c cider vinegar
1 Tbsp salt
1 Tbsp whole coriander
1 Tbsp cumin
1 Tbsp yellow mustard seed
1 c diced onion
peeled and grated ginger
minced garlic
1 c sugar
  • Combine vinegar, sugar, salt and spices in a large, non-reactive sauce pan and bring to a boil
  • Add radishes, onion, ginger and garlic and return to a boil, stirring often
  • Remove from heat
  • Ladle into bowls or jars
  • Let cool, cover and refrigerate for up to three weeks

Freezing Onions

Wanted to share something helpful with this first post...

Sometimes we have too many onions to use up before they begin to get soft and spoil. So just freeze them to use later in soups, stir-fry or any recipe that does not require fresh onions.

Just cut the ends of the onion off, cut in half from stem to root, slice to desired thickness. Place on a cookie sheet or plate, do not let them mound. Put in freezer until frozen, place in plastic bag, say a cup or so or what you might use in most recipes or in one large bag and just take out what you need. Enjoy later!
